Pathogen reduction data when applying high pressure processing to milk/colostrum and ready-to-eat foods
<p><strong>Introduction</strong></p> <p>This dataset was built by members of the EFSA Working Group on high pressure processing (HPP) of food during the preparatory work on the BIOHAZ Scientific Opinion on the efficacy and safety of high pressure processing of food (EFSA-Q-2020-00380) (<a href="https://doi.org/10.2903/j.efsa.2022.7128">https://doi.org/10.2903/j.efsa.2022.7128</a>).</p> <p>It was used to answer to the following Terms of Reference (ToR) of the mandate:</p> <p>ToR2. To assess the efficacy of HPP when applied to raw milk and raw colostrum from ruminants, and in particular:</p> <p>a. To recommend minimum requirements as regards time and pressure of the HPP, and other factors if relevant, for the control of <em>Mycobacterium</em> spp., <em>Brucella</em> spp., <em>Listeria monocytogenes</em>, <em>Salmonella</em> spp. and Shiga toxin-producing <em>Escherichia coli</em> (STEC), to achieve an equivalent efficacy to that of thermal pasteurisation.</p> <p> </p> <p>ToR3. To assess the efficacy of HPP when applied to foods known to cause human listeriosis and in particular:</p> <p>a. To recommend minimum requirements as regards time and pressure of the HPP, and other factors if relevant, to reduce significantly <em>L. monocytogenes</em> levels (e.g. by a certain log reduction), and assuming that the parameters influencing the growth of <em>L. monocytogenes</em> remain unchanged (e.g. shelf-life and storage conditions);</p> <p>b. To assess the efficacy on other relevant pathogens when applying the minimum requirements identified in a.</p> <p>A literature search was conducted to retrieve studies reporting on pathogen-specific parameters when treating milk/colostrum and ready-to-eat foods with HPP. A modelling approach was used to fit the derived log<sub>10</sub> reductions (logR) at specific pressure-holding time combinations. More information can be found in the Scientific Opinion.</p> <p><strong>Description</strong></p> <p>Two MS-Excel files contain the extracted data.</p> <p>One file consists of the data used for answering ToR2 and contains data on HPP inactivation of <em>Mycobacterium bovis</em>, <em>L. monocytogenes</em>, <em>Salmonella</em> spp., STEC, <em>Campylobacter</em> spp., and <em>Staphylococcus aureus</em> in milk and colostrum from ruminants.</p> <p>The other file was used for answering ToR3 and contains data on HPP inactivation of <em>L. monocytogenes</em>, <em>Salmonella</em> spp. and <em>E. coli</em> in three types of RTE food categories: category “cooked meat products”, category “smoked and gravad fish” and category “soft or semi-soft and fresh cheese”.</p> <p>Both files contain metadata related to product characteristics (e.g. the food matrix and composition), contamination characteristics (e.g. pathogen/strain used for inoculation, inoculation level, medium used for enumeration), HPP treatment characteristics (e.g. target pressure, time), and outcome (e.g. log<sub>10</sub> reduction).</p>

High temperatures and human pressures interact to influence mortality in an African carnivore
<p>1. The impacts of high ambient temperatures on mortality in humans and domestic animals are well understood. However much less is known about how hot weather affects mortality in wild animals. High ambient temperatures have been associated with African wild dog Lycaon pictus pup mortality, suggesting that high temperatures might also be linked to high adult mortality.</p> <p>2. We analysed mortality patterns in African wild dogs radio-collared in Kenya (0°N), Botswana (20°S) and Zimbabwe (20°S), to examine whether ambient temperature was associated with adult mortality.</p> <p>3. We found that high ambient temperatures were associated with increased adult wild dog mortality at the Kenya site, and there was some evidence for temperature associations with mortality at the Botswana and Zimbabwe sites.</p> <p>4. At the Kenya study site, which had the highest human impact, high ambient temperatures were associated with increased risks of wild dogs being killed by people, and by domestic dog diseases. In contrast, temperature was not associated with the risk of snare-related mortality at the Zimbabwe site, which had the second-highest human impact. Causes of death varied markedly between sites.</p> <p>5. Pack size was positively associated with survival at all three sites.</p> <p>6. These findings suggest that while climate change may not lead to new causes of mortality, rising temperatures may exacerbate existing anthropogenic threats to this endangered species, with implications for conservation. This evidence suggests that temperature-related mortality, including interactions between temperature and other anthropogenic threats, should be investigated in a greater number of species to understand and mitigate likely impacts of climate change.</p>

Quality changes in high hydrostatic pressure treated enriched tomato sauce
<h3>BACKGROUND</h3> <p>Use of high hydrostatic pressure (HHP) with reduced processing times is gaining traction in the food industry as an alternative to conventional thermal treatment. In order to enhance functional benefits while minimizing processing losses, functionalized products are being developed with such novel techniques. In this study, changes in quality parameters for HHP treated enriched tomato sauce were evaluated, with the aim to assess its viability as an alternative to conventional thermal treatment methods.</p> <h3>RESULTS</h3> <p>HHP treatments at 500 MPa, 30 °C/50 °C significantly increased the total phenolic and lycopene content of the sauce samples, achieving 6.7% and 7.5% improvements over conventionally treated samples. The antioxidant capacity of the HHP-treated samples was also found to match or be better than conventionally treated samples. Furthermore, a <em>T</em><sub>2</sub> relaxation time study revealed that pressure–temperature processing treatments were effective in maintaining the structural integrity of water molecules. Microbiological analyses revealed that 500 MPa/50 °C 5 min treatment can offer 8 logs reduction colony formation, matching the results of conventional thermal treatment.</p> <h3>CONCLUSION</h3> <p>Combined pressure–temperature treatments improve results, reduce time consumption. 500 MPa/50 °C treatments provided retention of quality parameters and significant reduction in microbial activity. © 2024 The Author(s). Persistent Photoluminescence and Mechanoluminescence of a Highly Sensitive Pressure and Temperature Gauge in Combination with a 3D-printable Optical Coding Platform
<p><span>Distinct types of luminescence that are activated by various stimuli in a single material offer exciting developmental opportunities for functional materials. In this study, we introduce a versatile sensing platform that exhibits three types of luminescence: photoluminescence (PL), persistent luminescence (PersL), and mechanoluminescence (ML), which enables the sensitive detection of temperature, pressure, and force/stress. The developed Sr<sub>2</sub>MgSi<sub>2</sub>O<sub>7</sub>:Eu<sup>2+</sup>/Dy<sup>3+</sup> material exhibits a linear relationship between ML intensity and force, and can be used as an ML stress sensor within the 3–30 N range. Additionally, the full width at half maximum (FWHM) value of the PL emission band and the PL lifetime of this material are remarkably sensitive to changes in temperature, with values of approximately 0.05 nm/K and 1.29 %/K, respectively. This study demonstrated the use of PersL for sensing pressure for the first time, along with its long-lasting (seconds) lifetime as a manometric parameter. The developed material functions as an exceptionally sensitive triple-mode visual pressure sensor; specifically it exhibits: i) a sensitivity of approximately −297.4 cm<sup>−1</sup>/GPa (8.11 nm/GPa) in bandshift mode, ii) a sensitivity of ~272.7 cm<sup>−1</sup>/GPa (14.8 nm/GPa) in bandwidth mode, and iii) a sensitivity of 42 %GPa<sup>−1</sup> in PL-lifetime mode, which is the highest value reported to date. Notably, anti-counterfeiting, night-vision safety-sign, 8-bit optical-coding, and QR-code applications that exhibit intense PersL were demonstrated by 3D-printing the studied material in combination with a polymer.</span></p>
