Base rates of food safety practices in European households: Summary data from the SafeConsume Household Survey

<p>This data set contains estimates of the base rates of 550 food safety-relevant food handling practices in European households. The data are representative for the population of private households in the ten European countries in which the SafeConsume Household Survey was conducted (Denmark, France, Germany, Greece, Hungary, Norway, Portugal, Romania, Spain, UK).</p> <p><em>Sampling design</em></p> <p>In each of the ten EU and EEA countries where the survey was conducted (Denmark, France, Germany, Greece, Hungary, Norway, Portugal, Romania, Spain, UK), the population under study was defined as the private households in the country. Sampling was based on a stratified random design, with the NUTS2 statistical regions of Europe and the education level of the target respondent as stratum variables. The target sample size was 1000 households per country, with selection probability within each country proportional to stratum size.</p> <p><em>Fieldwork</em></p> <p>The fieldwork was conducted between December 2018 and April 2019 in ten EU and EEA countries (Denmark, France, Germany, Greece, Hungary, Norway, Portugal, Romania, Spain, United Kingdom). The target respondent in each household was the person with main or shared responsibility for food shopping in the household. The fieldwork was sub-contracted to a professional research provider (Dynata, formerly Research Now SSI). Complete responses were obtained from altogether 9996 households.</p> <p><em>Weights</em></p> <p>In addition to the SafeConsume Household Survey data, population data from Eurostat (2019) were used to calculate weights. These were calculated with NUTS2 region as the stratification variable and assigned an influence to each observation in each stratum that was proportional to how many households in the population stratum a household in the sample stratum represented. The weights were used in the estimation of all base rates included in the data set.</p> <p><em>Transformations</em></p> <p>All survey variables were normalised to the [0,1] range before the analysis. Responses to food frequency questions were transformed into the proportion of all meals consumed during a year where the meal contained the respective food item. Responses to questions with 11-point Juster probability scales as the response format were transformed into numerical probabilities. Responses to questions with time (hours, days, weeks) or temperature (C) as response formats were discretised using supervised binning. The thresholds best separating between the bins were chosen on the basis of five-fold cross-validated decision trees. The binned versions of these variables, and all other input variables with multiple categorical response options (either with a check-all-that-apply or forced-choice response format) were transformed into sets of binary features, with a value 1 assigned if the respective response option had been checked, 0 otherwise.</p> <p><em>Treatment of missing values</em></p> <p>In many cases, a missing value on a feature logically implies that the respective data point should have a value of zero. If, for example, a participant in the SafeConsume Household Survey had indicated that a particular food was not consumed in their household, the participant was not presented with any other questions related to that food, which automatically results in missing values on all features representing the responses to the skipped questions. However, zero consumption would also imply a zero probability that the respective food is consumed undercooked. In such cases, missing values were replaced with a value of 0.</p>

Tomato Classification using Mass Spectrometry-Machine Learning Technique: a Food Safety-enhancing Platform

<p>Food safety and quality assessment mechanisms are unmet needs that industries and countries have been continuously facing in recent years. Our study aimed at developing a platform using Machine Learning algorithms to analyze Mass Spectrometry data for classification of tomatoes on organic and non-organic. Tomato samples were analyzed using silica gel plates and direct-infusion electrospray-ionization mass spectrometry technique. Decision Tree algorithm was tailored for data analysis. This model achieved 92% accuracy, 94% sensitivity and 90% precision in determining to which group each fruit belonged. Potential biomarkers evidenced differences in treatment and production for each group.</p>

Eurobarometer on Food Safety 2022 - Dataset

<p>This Special Eurobarometer, commissioned by EFSA, examines Europeans&rsquo; perceptions of and attitudes towards food safety and provides insights in terms of:</p> <p>&bull; Europeans&rsquo; interest in food safety-related topics and factors affecting food-related decisions;</p> <p>&bull; Awareness of and main concerns about food-safety topics, as well as attitudes towards healthy diet and food-related risks;</p> <p>&bull; Main information channels on food-related risks;</p> <p>&bull; Levels of trust in different actors from farm to fork;</p> <p>&bull; Awareness of different aspects of the EU food safety system;</p> <p>&bull; Behaviour in the area of food safety, using an example of a foodborne disease outbreak.</p> <p>The survey was carried out by the Kantar network in the 27 EU Member States between 21st March and 20th April 2022. A total of 26,509 respondents from different social and demographic groups were interviewed face-to-face at home in their mother tongue. In countries where using only face-to-face interviewing was not feasible due to the impact of COVID-19, online interviews were also used to supplement face-to-face ones.</p> <p>The methodology used is that of the Standard Eurobarometer surveys carried out by the Directorate-General for Communication. Daphnia magna trade-off safety from UV radiation for food

<p><span><span><span><span><span><span><span><span><span><span><span>Research on diel vertical migration (DVM) is generally conducted at the population level, whereas few studies have focused on how individual animals behaviorally respond to threats when also having access to foraging opportunities. We utilized a 3-D tracking platform to record the swimming behavior of <i>Daphnia magna</i> exposed to ultraviolet radiation (UVR) in the presence or absence of a food patch. We analyzed the vertical position of individuals before and during UVR exposure and found that the presence of food reduced the average swimming depth during both sections of the trial. Since UVR is a strong driver of zooplankton behavior, our results highlight that biotic factors, such as food patches, have profound effects on both the amplitude and the frequency of avoidance behavior. In a broader context, the trade-off between threats and food adds to our understanding of the strength and variance of behavioral responses to threats, including DVM.</span></span></span></span></span></span></span></span></span></span></span></p>

2019 Eurobarometer on Food Safety in the EU_Datasets

<p>This Special Eurobarometer, commissioned by EFSA, provides insights in terms of:</p> <ul> <li>Europeans&rsquo; overall interest in food safety, including factors affecting food-related decisions, main information channels on food-related risks, changes in behaviour and views on complexity of communication about food-related risks.</li> <li>Awareness and risk perceptions when it comes to food safety topics, trust in different sources of information and understanding of the EU food safety system</li> </ul> <p>The survey was carried out by the Kantar network in the 28 EU Member States between the 9<sup>th</sup>&nbsp;and 26<sup>th</sup>&nbsp;of April 2019. Some 27,655 respondents from different social and demographic groups were interviewed face-to-face at home in their mother tongue.&nbsp;</p> <p>Additional data was collected during November 2019 in the following pre-accession countries: Albania, Montenegro, Serbia, North Macedonia and Turkey.</p> <p>The methodology used is that of the&nbsp;<a href="http://ec.europa.eu/commfrontoffice/publicopinion/index.cfm">Standard Eurobarometer surveys</a>&nbsp;carried out by the Directorate-General for Communication. Agricultural intensification heightens food safety risks posed by wild birds

<p>1. Agricultural intensification and simplification are key drivers of recent declines in wild bird populations, heightening the need to better balance conservation with food production. This is hindered, however, by perceptions that birds threaten food safety. While birds are known reservoirs of foodborne pathogens, there remains uncertainty about the links between landscape context, farming practices, and actual crop contamination by birds.</p> <p>2. Here, we examine relationships between landscape context, farming practices, and pathogen contamination by birds using a barrier-to-spillover approach. First, we censused bird communities using point count surveys. Second, we collected 2024 faecal samples from captured birds alongside 1215 faecal samples from brassica fields and food processing areas across 50 farms spanning the USA West Coast. We then estimated the prevalence of three foodborne pathogens across landscape and livestock intensification gradients. Finally, we quantified the number of plants with faeces.</p> <p>3. <i>Campylobacter </i>spp. were detected in 10.2% of faeces from captured birds and 13.1% of faeces from production areas. Nonnative birds were 4.1 times more likely to have <i>Campylobacter </i>spp. than native birds. <i>Salmonella </i>spp. were detected in 0.2% of faeces from production areas and were never detected in captured birds. We detected evidence of Shiga toxigenic <i>E. coli </i>in 1 sample across the &gt;3200 tested.</p> <p>4. <i>Campylobacter</i> spp. prevalence in faeces from production areas increased with increasing mammalian livestock densities in the landscape but decreased with increasing amounts of natural habitat.</p> <p>5. We encountered bird faeces on 3.3% of plants examined. Despite the impact on pathogen prevalence, landscape context did not increase the number of plants with bird faeces, although on-farm mammalian livestock density slightly did.</p> <p>6. <i>Synthesis and applications. </i>Food safety and wildlife conservation are often thought to be in conflict. However, our findings suggest that natural habitat around farms may reduce crop contamination rates by birds. This is perhaps because natural habitat can promote native birds that are less likely to harbour foodborne pathogens or because it decreases contact with livestock waste. Our results suggest that preservation of natural habitats around farms could benefit both conservation and food safety, contrary to current standards for "best practices."</p>

Disentangling the roles of bottom-up and top-down drivers in the trade-off between food acquisition and safety in prey with multiple predators

1. Prey face a trade-off between acquiring food and avoiding predation, but food availability, and therefore its effect, is rarely measured in field studies investigating non-lethal effects of predation. The main aim of this study is to investigate the role of the presence of predators in the functional adjustments of feeding parameters with patch quality in a medium-size herbivore. 2. In Hwange National Park (Zimbabwe), we set up an experiment by manipulating, over two years, patch quality for impala (Aepyceros melampus), a medium-sized herbivore. We assess predation risk by monitoring the presence of three GPS-equipped predators: African lions (Panthera leo), spotted hyaenas (Crocuta crocuta) and African wild dogs (Lycaon pictus). 3. In enriched, fertilised plots the impalas reduced step rates (i.e. the rates of change in feeding stations), and increased their number of bites per feeding station while bite rates were not affected. Thus, the main adjustment of their feeding was the step rate. The total time the impalas spent vigilant appeared to be a good predictor of the variation of their bite rate. Although vigilance caused a reduction in bite rate when at a feeding station, the impalas reduced the relative costs of vigilance by continuing chewing and processing their food when scanning for predators. 4. When predators were in the vicinity, the impalas increased their exclusive vigilance (high-cost vigilance) but not their vigilance while chewing (low-cost vigilance) and decreased their bite rate while their step rate and the number of bites per feeding station did not change significantly. The impalas were thus visually disconnected from their patch, and reduced their bite rate when actually foraging. Exclusive vigilance increased when both lions and hyaenas were in the vicinity, and when wild dogs were nearby. 5. Patterns of vigilance that altered bite rate were linked to the presence of predators during the previous 24h. Over the long term patch quality was the main determinant of the feeding parameters (step rate and bite rate). This study shows how predators, by affecting the time prey devote to predator detection, shape the functional adjustments of food acquisition by prey to local patch quality.
