European consumers ́ preference and willingness to pay for food products labelled as obtained by a circular farming system -in relation to environmental attitudes and consumption behaviours

<p>Data was collected with questionnaire-based research carried out in Belgium, Croatia, Hungary, Italy, Poland, and Spain as part of a European project. The survey questions were designed to obtain the Willingness to pay using 2 different methodologies the discrete choice experiment and the open-end choice experiment. The survey also included questions about consumers environmental attitudes, and consumption behavior (purchase, use and recycling), to identify if them have influence on preferences towards more sustainable food products. The 3 analyzed food products were pork meat, milk and bread, all of them obtained through different agricultural production systems (circular, conventional, and organic agriculture). The sample was stratified in terms of gender and age to be representative to the average population in each country. Furthermore, respondents included in this study were those that are mainly, or in part responsible for the household food shopping. The questionnaire was translated to the languages of the countries involved in the data collection and pre-launched using a pilot sample of 50 consumers in each case study country. &nbsp;Finally, a total of 5,362 validated questionnaires were obtained. Data was collected online using the Qualtrics market research company, and Net panel market company for Hungary from June 2021 to January 2022.</p>

Survey data on behaviours and attitudes towards green food consumption of participants of the SmartFood Urban Living Lab in Warsaw, Poland

<p>In this dataset, we present raw data of a survey on behaviours and attitudes towards green food consumption, conducted between June 2023 and April 2024 among a group of 21 households from Warsaw, participating in a SmartFood Urban Living Lab (ULL). The dataset is complemented with results collected from two control groups. The SmartFood Urban Living Lab was an intervention aimed at providing residents of urban blocks of flats with a novel technology for growing their own food. The ULL served as an experimental ground for testing and refining innovations such as hydroponic cabins, rainwater management systems, solar energy systems, and insect farming units. Residents actively participated in the lab, providing valuable insights into the practical challenges and benefits of urban farming, which helped refine and adapt the technologies for broader application. After each month of the intervention, a survey was conducted to check participants' behaviours and attitudes towards green food consumption</p>

Dataset on consumer acceptance of policy measures for sustainable food consumption

<p>This data was obtained from an online survey conducted with Swiss participants from the German-speaking parts of Switzerland. The survey was conducted in February 2023. Participants were recruited through a professional panel provider and quotas were used for age and gender. The final sample contained 453 respondents. In the first part of the survey, respondents provided basic sociodemographic information and reported how often they consumed meat and dairy products. In the second part, their knowledge regarding the environmental impact of food was assessed using an existing scale by Hartmann et al. (2021). Next, respondents indicated for 19 different policy measures how much they agreed with each of them. Finally, respondents answered several questions assessing their health consciousness and environmental attitudes using existing scales.&nbsp;The survey can be used and adapted to different contents, aiming to investigate public acceptance of policy measures for sustainable food consumption.</p>

Upcycling food ingredients from orange by-products by hot air-microwave drying. Impact on energy consumption.

<p>Currently industrial citrus by-products represent a relevant environmental issue. The main aim of this work was the chemical characterization of the different bioactive compounds obtained after hot air-microwave drying (HAD+MW) of orange by-products, and their further conversion into three <strong>upcycled </strong>ingredients with health-related benefits: aqueous extract, ethanolic extract and <strong>dietary fibre</strong>. Total phenolics, antioxidant capacity, individual phenolic acids, flavonoids, limonin and carotenoids were monitored during blanching and colour extraction steps by analysing fresh by-products and process co-products: an aqueous extract rich in polyphenols and an ethanolic extract rich in carotenoids. After drying, the resulting fibre was characterized in terms of chemical composition, soluble and insoluble dietary fibre content and particle size.&nbsp; Technological properties and colour were compared to those of commercial citrus fibre. Energy and time consumption were compared with conventional hot air drying (HAD). Most polyphenols (50-65 %) and limonin (70 %) were extracted during the blanching step. 86 % of carotenoids were removed by soaking in ethanol. The orange fibre obtained had 71.9 g DF/ 100 g and antioxidant properties (205 mg TE/ Kg<sub>dm</sub>). Whiteness, water retention capacity and oil retention capacity were similar to commercial citrus fibre. HAD+MW reduced drying time and energy consumption by up to 50&nbsp;% compared to HAD.</p>

Life cycle inventory database for consumption in Québec – Food consumption

<p>These inventory datasets are essential for calculating the carbon footprint of an individual&rsquo;s consumption in Quebec.</p> <p>Led by the CIRAIG, in collaboration with PolyCarbone and ESG-UQAM, this project aims to develop an inventory database of the life cycle of consumption in Quebec. These inventory datasets are essential for calculating the carbon footprint of an individual&rsquo;s consumption in Quebec. The inventory is developed with a life cycle approach. Ultimately, it allows for evaluating carbon footprints at every step of the consumption life cycle (extraction of primary sources, transformation, transport, use of goods and services, end of life). The inventory is developed in a modular fashion for the different areas of individual consumption as&nbsp;Food; Transport; Housing; Clothing; Travel; Communications; Entertainment and Culture; Financial and Administrative Management; Health, Hygiene, and Beauty. These areas are developed and detailed as a priority, as they contribute most to an individual&rsquo;s carbon footprint in Quebec. Other non-priority areas are roughly modelled in order to provide a complete (but more uncertain) portrait of individual consumption. The project is underway and the deliverables will be made available online as things progress. Data were collected from 804 infants, toddlers and children (age group 0.5 to &lt;5 years) in Germany. The food consumed was recorded by the parents as &quot;food as eaten&quot; over a total of 6 days (2x3-day food record with an interval of 3-6 months for toddlers and 4-8 weeks for infants).
