Data associated with a sequence of publications on polysaccharide/gelatin edible films incorporated with astaxanthin

<p>This repository contains the dataset needed for the papers concerning polysaccharide/gelatin edible films incorporated with increasing concentrations of synthetic water-soluble AstaSana astaxanthin. This dataset contains physicochemical, release, and antioxidant properties of binary (75/25) carboxymethyl cellulose/ gelatin, octenyl succinic anhydride starch/ gelatin, gum Arabic/gelatin, and water-soluble soy polysaccharide/gelatin blend films supplemented with increasing concentrations (0, 0.25, 0.5, 1%) of astaxanthin. The database has been developed within the National Science Centre (Poland)-funded project number 2019/35/N/NZ9/01795.</p>
