Effect of crosslinking modification with 4,4´-diphenylmethane diisocyanate (MDI) on physicochemical properties of peanut meal-based adhesives
<p><span>The PM-based adhesives were prepared by crosslinking modification with diphenylmethane diisocyanate (MDI) as a crosslinking agent. The viscosity and water resistance of the modified PM-based adhesive were improved significantly, making it beneficial to the application of label industry. This paper investigated the properties of PM-based adhesives, including viscosity, solid content and water resistance time. Viscosity and solid content of the modified adhesives improved observably as MDI was introduced, and its water resistance time was up to 77 h when the modifier was added at 15% (based on PM), which met the industry requirements of Beer labels in China. </span>In addition, FTIR and XRD were used to characterize the physical and chemical interactions in the cured adhesives. The thermal stability of the cured adhesives was determined by TGA, and SEM was used to observe the microstructure of the cured adhesives.<span> The characterization and analysis results of the cured adhesives showed that incorporating MDI into the adhesives formed dense crosslinking structure because of chemical reactions between MDI and active groups on the PM protein molecules and introduced hydrophobic group into the adhesives, preventing water intrusion effectively, thus improving the water resistance of the cured adhesives. </span></p>
Physicochemical and sensorial properties of tomato leathers at different drying conditions
<p><span>Tomato leather as a healthy alternative to traditional fruit leathers was formulated. A tray dryer with changing temperature (50</span><span>℃</span><span>, 60</span><span>℃</span><span>, and 70</span><span>℃</span><span>) and relative humidity (5%, 10%, and 20%) was used to achieve the best product in terms of color, water distribution, lycopene content, mechanical, and sensorial properties. Color change was the highest at 70</span><span>℃</span><span> due to Maillard reaction. Lycopene content was also the highest at 70</span><span>℃</span><span>. TD-NMR relaxometry showed that water distribution of all samples was homogeneous and similar to each other. Processing conditions affected mechanical properties significantly. The highest tensile strength was observed at 70</span><span>℃</span><span>, possibly due to the denatured proteins. Sensory analysis indicated better flavor development at 70</span><span>℃</span><span>, whereas overall acceptability of samples was higher at 50</span><span>℃</span><span>. The results of this study showed the main processing parameters of tomato leather with a minimal amount of ingredients, with acceptable mechanical and sensorial properties. </span></p>

The physicochemical and thermal properties of deep eutectic solvent with different hydrogen bond donor (alpha hydroxy acid and polyol)
<p><span>Deep eutectic solvents (DESs) are a novel class of solvents that have gathered interest due to their unique properties particularly in its application of biomass fractionation. It is critical to study its properties from an engineering standpoint because of its importance in mass transfer, fluid mechanics, modelling, simulation and equipment design. The comparison of physicochemical and thermal properties of DESs has not been thoroughly investigated, particularly when a different functional group, such as alpha hydroxy acid (lactic acid, LA) or polyol (glycerol, Gly), is used as the hydrogen bond donor (HBD). Furthermore, understanding how molar ratios affect properties is crucial since they may be fine-tuned to meet the needs of specific applications. Thus, the purpose of this study is to determine the physicochemical properties (viscosity, density, refractive index and pH) and the thermal properties (freezing point and decomposition temperature) of DESs with different HBD functional groups (LA and Gly) at various molar ratios (1:2–1:10). The HBD's functional groups and molar ratio change significantly impacted the properties due to hydrogen bonding sites and strength, alkyl chain length and molecular weight and electrostatic and dispersion interactions. The correlation between DESs molar ratios and properties is not always linearly due to eutectic phenomena.</span></p>

Effect of microwave-vacuum drying on the physicochemical properties of a functional tomato snack bar
<p>Abstract</p> <p>BACKGROUND</p> <p>Tomato is one of the indispensable ingredients of the Mediterranean diet. Reformulation of traditional Mediterranean products to increase the adherence of the consumers is getting popular. In this study, a tomato snack bar enriched with olive powder and pea protein was developed by using microwave-vacuum drying. Formulations also included the tomato powder (TP) and low methoxylated pectin (LMP) as a structuring agent.</p> <p>RESULTS</p> <p>The moisture content (MC) of the microwave-vacuum-dried samples varied in the range 13.6%-19.8% and water activity (<em>a</em><sub>w</sub>) values were ~0.6. The LMP and TP concentration affected the color of microwave-vacuum-dried samples. However, the color mainly changed in conventionally dried samples due to browning. In microwave-vacuum-dried samples, lycopene content decreased with increasing LMP, but increased with increasing TP. Textural properties of microwave-vacuum-dried snack bars increased with increasing LMP and TP.</p> <p>CONCLUSION</p> <p>Both texture and FTIR spectroscopy results indicated that there was a network formation due to the contribution of protein and pectin; however, the type of interaction was highly dependent on the drying mechanism. NMR relaxometry data showed that microwave-vacuum-dried samples had a more uniform water distribution. Besides its time and energy efficiency, microwave-vacuum drying improved the color and textural properties of tomato snack bars compared to conventionally dried ones.</p>
