Rheological and sensorial behavior of tomato product enriched with pea protein and olive powder

<p>In this study, a new functional product using Mediterranean ingredients (tomato, tomato peel powder and olive powder) was formulated where two different concentrations of protein (1 and 2%) and peel (2 and 4%) were tested. Olive powder was kept at a constant concentration of 2%. Physico-chemical, Rheological, and Sensorial analysis were carried out on the formulated samples. Soluble protein content was found as the highest in the sample containing 4% peel and 2% protein and it was affected by the pH and tomato peel concentration. Rheological results reveal shear-thinning behavior, as defined by the HerschelBulkley model, with protein and peel concentrations having a major influence on yield stress and viscosity. A positive trend was noticed between apparent viscosity and peel concentration, meantime protein concentration affected apparent viscosity adversely. Contrary relation between consistency index (k) values and apparent viscosity illustrate the complex interaction between protein and peel, particularly at higher concentrations. Furthermore, Principal Component Analysis (PCA) was used to investigate the complicated sensory&nbsp;landscape of tomato products with different quantities of pea protein and tomato peel. While higher tomato peel and protein levels have no direct impact on&nbsp;rheological qualities, they do add to astringency and sourness, which influences overall acceptability. Remarkably, the sample with the greatest quantities of peel&nbsp;and protein exhibits a delicate balance, with a loss in perceived tomato taste intensity and overall acceptability offsetting an increase in astringency. In terms&nbsp;of overall acceptability, the most preferred beverage was selected as the sample&nbsp;formulated with 2% peel and 1% protein.</p>

Dataset for: A novel hydrophobically associating water-soluble polymer utilized as constant rheology agent for cement slurry

During the process of well cementing in deepwater, the cement slurry experiences a wide range of temperature variation from low temperature at seabed to high temperature in downhole. The elevated temperature affects the rheology of cement slurry. The change of rheology of cement slurry could influence the safety of cementing operation. The aim of this paper is to develop a new kind of hydrophobically associating water-soluble polymer (KWHL-1) as an additive to prepare a constant rheology oil well cement slurry, which can be used at temperature range from 4℃ to 90℃. The acrylamide, 2-acrylamide-2-methylpropionic acid and stearyl methylacrylate were applied to synthesize the KWHL-1 by the inverse microemulsion polymerization. Test results indicate that the critical association temperature of KWHL-1 is 45℃. The critical association temperature is independent with KWHL-1 concentration, salt concentration and alkalinity of solution. When the temperature is below 45℃, KWHL-1 shows little influence on the viscosity of solution. When the temperature is above 45℃, the KWHL-1 forms spatial network structure by intermolecular hydrophobic association, and thus increases the viscosity of solution significantly. The KWHL-1 also displays good thermal stability and excellent salt and alkali resistance properties. In addition, the KWHL-1 shows nearly no negative influence on the basic properties of cement slurry, which indicates that the KWHL-1 can be used as a constant rheology agent to prepare a cement slurry with constant rheology in the temperature range of 4 to 90℃.

<p>Output files from the BBM, mEVP and mEVP+ runs developed in the paper entlited "Modelling Antarctic sea ice variability using a brittle rheology".&nbsp;</p> <p>Paper abstract:</p> <p>Sea ice is a composite solid material that sustains large fracture features at scales from metres to kilometres which can play an important role in coupled atmosphere-ocean processes. To model these features, brittle sea ice physics, via the Brittle-Bingham-Maxwell (BBM) rheology, has been implemented in the Lagrangian neXt generation Sea Ice Model (neXtSIM). In Arctic-only simulations the BBM rheology has shown a capacity to represent observationally consistent sea ice fracture patterns and breakup across a wide range of time and length scales. Still, it has not been tested whether this approach is suitable for the modelling of Antarctic sea ice. Here, we introduce a new 50-km grid-spacing Antarctic configuration of neXtSIM, neXtSIM-Ant, using the BBM rheology. We evaluate this simulation against observations of sea ice extent, drift, and thickness and compare it with identically-forced neXtSIM simulations that use the standard modified Elastic-Visco-Plastic (mEVP) rheology. In general, using BBM results in thicker sea ice and an improved representation of sea ice drift than mEVP. We suggest that this is related to short-duration breakup events caused by Antarctic storms that are not captured in the viscous-plastic model.&nbsp;</p>
