<p><em>The file contains the raw data related to the manuscript: &quot;Acetaldehyde in Polyethylene Terephthalate (PET) Bottled Water: Assessment and Mitigation of Health Risk for Consumers&quot;</em></p> <p><strong>Abstract</strong>: This study was designed to investigate the levels of acetaldehyde residues in polyethylene terephthalate bottled water and its significance in terms of consumer health. We analyzed 104 samples collected throughout Italy, so as to be representative of the national market. Parameters such as CO<sub>2</sub>&nbsp;level, shelf life, weight of the empty bottle and distance from the production sites to the point of sale were also collected. Although the levels of acetaldehyde complied with the limits established by Italian legislation, they varied widely, with concentrations ranging from 0.41 to 76.2 &micro;g/L. An assessment of safety for human health, using the margin of exposure approach, showed that the amount of acetaldehyde in bottled water is unlikely to be of any safety concern for human health. The acetaldehyde residues were mainly due to CO<sub>2</sub>&nbsp;levels which influence solubility of acetaldehyde in water. They are also related to the size of the bottle and the distance from the store, but not to the shelf life, at least for 40 days. The findings suggest some good practices for a better product from the point of view of public health, like polymer quality and limitation of transport distances.</p> <p><strong>Funding</strong>: This research was funded by Mineracqua.</p> <p>&nbsp;</p>

Human health impact based on adult European consumers' dietary exposure to chemical contaminants and consumption of unprocessed red meat, processed meat, and legumes

<p>This dataset was generated within the PRISMA project (Marie Skłodowska-Curie Grant Agreement No. 101110615) for assessing the health impact for adult consumers from 25 European countries due to dietary exposure to chemical contaminants and consumption of food based on different dietary patterns.</p><p>The risk coefficients used to generate data are presented in Table S1.</p><p>File S2 presents the health impact based on the chronic dietary exposure to chemical contaminants for each country.</p><p>File S3 presents figures regarding the health impact for each country for adult consumers due to dietary exposure to chemical contaminants and consumption of food based on different dietary patterns.</p><p>File S4 presents the health impact based on the consumption of unprocessed red meat, processed meat, and legumes for each country.</p><p>&nbsp;</p>

Assessing consumers' attitudes, expectations and intentions towards health and sustainability regarding seafood consumption in Italy

<p>The EU and its Member States have articulated a sustainability vision &lsquo;to live well within the limits of our planet&rsquo; by 2050. In this context, consumers play a key role, being able to drive seafood production sustainability and responsibility according to their behaviour, also in relation to their attitudes towards health, nutrition and wellbeing. On the basis of these premises, this research explores Italian consumers&#39; attitudes towards health and sustainability in relation to seafood, in order to segment different target of consumers. The framework used in this study is mainly focused on a quantitative exploratory data collection based on an online survey. Three groups of consumerswere identified based on general health interest, perceived benefits of eating seafoods and attitude towards seafoods: Health seekerswho eat seafood for duty; Health seekers and seafood lovers; Lowcommitment to health and indifferent to seafood. Differences among groups related to socio-demographic characteristics, sustainability attitudes, intentions and interest in information about seafood productswere also investigated. In particular, the first two groups are more familiar with sustainable seafood products and more interested in information on these products than the third, both in terms of product origin and seasonality. Consumers belonging to second group show a higher probability to buy seafood products considering this characteristic than the other two groups. Based on the results obtained, a strategic plan could be developed to achieve relevant goals in education, communication and sustainability labelling related with seafood products. Following a preliminary scouting carried out with all the seafood stakeholders, a specific territory to test this approach has been already&nbsp;identified in Torre del Cerrano (Italy). These results have a strong implication for policy makers and educational<br> institutions as they identify differences in attitudes and perceptions among consumers that are crucial in order to<br> design the right communication strategy strategies as well as messages content.</p>

Health versus environmental benefits: Does additional information influence consumer acceptance of pulse-based spreads?

<p>Despite the known health benefits and the potential for substituting less environmentally sustainable consumed foods such as meat, the current intake of pulses in developed countries remains less than recommended. Barriers are related to sensory characteristics and lack of knowledge about preparation, while drivers of environmental benefits are intangible. The aim of this study was to investigate the effect of additional information about health or environmental benefits of pulses on the acceptance of novel pulse-based products from chickpeas, black beans, and faba beans. Perceptions of these pulse-based spreads in a blind and informed stage were assessed with 202 consumers in urban and sub-urban areas of Denmark. In general, the familiar chickpea spread followed by the relatively most unfamiliar black bean spread was liked the most. Only for these two products, additional information increased hedonic perception, regardless of the context (health or environmental benefits). If consumers did not like the spread, as found for the faba bean spread, providing additional information did not significantly alter this perception. Participants&rsquo; preferences and willingness-to-pay (WTP) in a discrete choice experiment (DCE) was corresponding with hedonic scores while providing additional information was found to increase the WTP. These findings suggest that extrinsic cues such as health or environmental benefits may only be useful in products with an acceptable baseline taste profile. Moreover, black beans might be investigated as a promising source for further product development due to their acceptance by consumers besides being the comparably most unfamiliar pulse type.</p> <p>&nbsp;</p>
